Area: All the vineyards stand on the same south-, south-eastern facing slope and are surrounded by woods, which shelter them from the main winds. So, Bonsalto’s microclimate is one-of-a-kind, it is quite unique. Soil: clayey, alluvial. The skeleton consists of pebbles and water-polished sandstone. Quite full of macronutrients and poor in nitrogen, alkaline soils are not too fertile, so they provide good water supplies even in the draughty seasons. The Trebbiano vineyard is situated at an elevation of 77 meters and is nearly 60 years old. It is located on a continental deposit (Ruscinian and Villafranchian), predominantly consisting of sands and conglomerates. These soils originated over two thousand years ago.

Harvest: strictly by hand, into boxes
Vinification and maturation: spontaneous fermentation, with wild yeasts only, and maceration with skins for about 20 days (at 22° – 23° C.). Maturation in steel and concrete for another 6 months, then 10 months in bottles.
Distinctive features: ancient grapes for a white wine that plays on reinventing the tradition of our land. It has unexpected colours, flavours and tastes. It travels over flowery notes, nuances of honey and citrus bursts, while the mouthfeel is flavoursome, full-bodied and refreshing.
